Several times a month, a recipe for a kefir cupcake helps me out. I have several dozen fillings so far, and today I propose a recipe for a kefir cake with chocolate streusel and nuts. In our family and among friends, this recipe was named "Uletny".

To prepare Streisel, combine melted margarine, flour, sugar and cocoa.

Stir with a fork until a crumb is formed - a streusel.

To prepare kefir dough for cake, beat eggs with sugar.

Then add kefir, flour with baking powder and vegetable oil, mix and beat a little.

Add the nuts to the dough and mix.

Transfer the kefir cake dough with mixed nuts into a silicone mold or any other greased baking dish and sprinkle with streusel on top.

Rub the orange zest on a fine grater, removing only the top orange layer from the oranges. Put eggs in a deep bowl, a pinch of salt, gradually adding 200 g of sugar, beat with a mixer (blender) until frothy and sugar is completely dissolved. Add orange zest, a pinch of soda, sour cream, mix with a mixer at low speed until smooth. Add sifted flour mixed with baking powder, mix with a mixer at low speed until smooth.

Mix melted butter with a spatula into the resulting batter. Pour the dough into a muffin tin (mine is 23x15x5cm), oiled or lined with baking paper. We bake in an oven preheated to 160 degrees for 50 minutes. We check the readiness of the cake with a toothpick or a wooden skewer for kebabs, pierce the cake, take it out, the toothpick should remain dry.

Preparing the filling for the cake: cut the oranges in half, squeeze the juice out of the oranges, filter through a sieve. In 150 ml. dissolve orange juice 1 tsp. starch and 40 g of sugar, while stirring, bring to a boil.

There are a lot of vertical punctures with a wooden skewer in the finished cupcake. Pour the pouring over the cupcake with a tablespoon so that the cupcake is soaked with the pouring through the punctures. We are waiting for about 20 minutes until the cake has cooled and soaked in orange filling.

Today I am preparing "Ant Pie" - this is how the name of this pie is literally translated from German. Chocolate sprinkles are added to the cake dough to decorate the cakes, and on the cut, the cake is obtained with characteristic ant moves. The pie is very popular, so there are many different recipes, mine is from a famous pastry chef. True, I cooked a pie from half the norm, with my own minor changes. The pie turns out to be very tender, tasty, beautiful and easy to prepare. Let's cook!

For the dough: 120 g flour 125 butter 4 small eggs (according to the recipe 57 g yolk and 115 g protein) 125 sugar 20 g corn starch 8 g vanilla sugar 5 g baking powder pinch of salt 20 g chocolate topping for cakes (or chopped chocolate)

For chocolate glaze: 80 g milk chocolate 50 g butter a little white chocolate for decoration

Grease the form with butter and sprinkle with flour. Shake off excess flour.

You can bake a cake in any shape: square, round, whatever it is.

Mix the flour, starch and baking powder for the dough as thoroughly as possible so that the dry ingredients are evenly dispersed in volume and the cake rises evenly. Then we sift. Pour in chocolate sprinkles and stir.

I invite you to a tea party with a delicate, fragrant, nutty cake in a weightless creamy glaze !! The cake is fluffy, crumbly, with a slightly moist crumb!

Pour "Dr. Oetker" yeast and a tablespoon of sugar into warm milk. Stir and leave to activate the yeast for 5-10 minutes.

Egg, remaining sugar and "Dr. Oetker" vanilla sugar, beat until light fluffy.

Continuing to beat, add softened butter and cottage cheese.

Add the dough to the egg-oil mixture, mix. Pour in the sifted flour in several stages. Flour from different manufacturers has different properties, so it is best to introduce it gradually. The dough should be thick and sticky to your hands. I kneaded first with a mixer (dough beaters), and then with a spoon. Hands were clean !! :) Cover the dough with foil and leave for 1 -1.5 hours to rise.
